Ones I have, or my friend who is an Anime freak has (that I remember):

Ghost in the Shell (I think it was already mentioned at few times)
Record of the Lodoss Wars
Akira
Fist of the North Star
Macross (and the redesigned version known as Robotech)
Macross II
Project A-Ko (really quite funny)
*Anything* Armitage
Vampire Hunter D & Bloodlust
Dirty Pair Flash
Heavy Metal (first movie, haven't seen the later one)

I can't even list the ones I've seen.  When I was in training for my first MOS (job field) in the Army, a guy there had his wall locker + 8 book boxes full of Anime tapes (some in Japanese, some translated to English, some in Japanese with English subtitles).... by far the largest collection of Anime I have ever seen.  And while I had watched many of those, I really had not even scratched the surface of what he had (he claimed he had about four times as many tapes in storage at home).  Plus he was heading out to Korea, and was panning on getting more.

Ack! can't believe i forgot Maze :-P

one of the first anime series i watched, loved it :-P Some adult humor in it, but lots of jap. anime has that.. the artwork is very nice though, and story line seems reasonable, though can be a tad confusing the first time you watch it...

I love how the creators were able to put so much emotion into the movie :-)

Jotahn

I can completely recommend Boogiepop Phantom for being thoroughly unusual and very interesting as an anime series. great atmosphere!

Woohoo, an anime thread, two that I didn't see mentioned yet:

Raxephon (somewhat similar to Evangelion but better IMO)
Gundam MS 08th

Some that I have to push again in no particular order:
Ghost in the Shell
Ninja Scroll (I agree, don't watch any but the first)
Cowboy Bebop (series and movie)
Trigun
Vampire Hunter D & Bloodlust(both are great and the visuals in the new one are amazing)
Hellsing
Gundam Wing & the Endless Waltz movie
Akira
Gasaraki
Record of Lodoss Wars

Soriab

LOL Its pointless to add mine seeing how they are all listed above...      8)

Mandrokamma

Ebichu the Housekeeping Hamster!

Such a disturbing show, but it's one of the funniest things I've seen in my life.  I was at Otakon (anime convention in Baltimore) a couple years ago and they were screening episodes 1-6 during some time we were killing before a panel.  My friend had heard about it and recommended we go watch it.  My Lord...

Isn't that just another ninja kids[TM] show?  :P
OK, i missed the story since i've only seen a few episodes in Japan.
What looked interesting tho is "Stellvia", even if it looked like they stole it together from several other series'.
And i missed "Digi Charat" and "Child's Toy (Kodomo no omocha)" in my first list. Both are funny/silly series with tons of episodes. Prolly only available as fansubs tho. Damn the mainstream stuff.

Witch Hunter Robin is another good one.

I've heard of a new one called Kiddy Grade. Don't know much about the story but it seems to have really good animation.
